Merry Christmas!

Merry Christmas all! No podcast today but I'll leave you with a seafood review. Click here and read on. =)

Summary of review: I went to Kuala Selangor for seafood today and it seems that food there isn't that delicious after all. But if you are headed there, be sure to buy their prawn crackers. ('har peng') They have fish and potato crackers too. They are delicous!

Eat First Think Later - Episode 005

Ingredients :
Cake
- 55g walnuts or pecans, toasted and coarsely chopped (60g to 70g would be better, and use pecans to avoid the bitter taste of walnuts)
- 170g raw carrots, grated (200g)
- 280g all-purpose flour
- 1/2 tsp baking soda
- 3/4 tsp baking powder (1/4 tsp if you are using self rising flour)
- 1/4 tsp salt
- 3/4 tsp ground cinnamon
- 2 large eggs (or 3 medium sized eggs)
- 250g granulated white sugar (175g will do)
- 120ml safflower or canola oil (120g of butter or 120ml of sunflower oil)
- 1 tsp pure vanilla extract (vanilla essence will do too)
- (you can also add 50g of un sweeten raisins)

Method:
1. Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven.
2. Butter two 6 x 2 inch cake pans and line the bottoms of the pans with a circle of parchment paper.
3. Toast the pecans or walnuts for about 8 minutes or until lightly browned and fragrant. Let cool and then chop coarsely.
4. Peel and finely grate the carrots. Set aside.
5. In a separate bowl whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
6. In bowl of electric mixer, with the paddle attachment, beat the eggs until frothy (Frothy means foamy. Lift the paddle attachment from the mixture, if the eggs mixture drips down, that means you still have not beaten the egg enough).
7. Gradually add the sugar and beat until the batter is thick and light colored
8. Add the oil in a steady stream and then beat in the vanilla extract.
9. Add the flour mixture and beat just until incorporated. (Don't over beat) With a large rubber spatula fold in the grated carrots and chopped nuts.
10. Evenly divide the batter between the two prepared pans and bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

Frosting
- 60g unsalted butter, room temperature
- 225g cream cheese, room temperature (250g, just use the whole bar)
- 140g confectioners sugar, sifted (75g will do, if you like more of the cream cheese taste, don't put sugar at all!)
- 1/2 tsp pure vanilla extract (vanilla essence will do too)
- 1 finely grated lemon zest (Orange works well too)
- 1 tbsp fresh lemon juice (3 to 4 tbsp or orange juice)

(Very important for butter and cream cheese to be in room temperature for smooth and easy to make frosting. Clumps of butter and cream cheese will spoil the frosting)

Method:
1. In bowl of electric mixer, with the paddle attachment, beat the cream cheese and butter, on low speed, until very smooth with no lumps.
2. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth.
3. Beat in the vanilla extract, lemon zest and juice.

BBQ your salmon, in a tin can

My buddy emailed me this very interesting Salmon fish. I'm not sure which country have this off the shelf, but definetly not in Malaysia .... yet.


$12.90 for a raw (to be BBQ) Salmon fish in a tin.


All you need is open space and a match. Great for camping!

Eat First Think Later - Episode 003

Episode summary : Very delicios and cheap Thai food. Tom Yam soup noodles, Som Tham, sweeten tapioca, Ka Phrow rice, Tom Yam fried rice, kerabu sotong, Yam Ma Ma, kerabu pork, Yam Pun Sen, mango glutinus rice, pineapple fried rice, green curry fried rice, Tom Yam seefood soup.



Edit [1 June 2006]: More and more people are getting to know about this nice little stall, the problem is with this people is that many of them can't take spiciness of the tom yam and the kerabu. The tom yam fried rice wasn't nice anymore, and everything was not spicy enough anymore. I asked the chef about the "new" taste and he said I should have told him that I wanted the "original taste, the spicy one". He had to cut down the spiciness for the rest of the customers because they were complaining that the dishes were too hot for them. So just a tip for those who want to try the dishes out, ask for the "original taste, the spicy one" for the real delicious taste of the Thai food. The pineapple fried rice is still good yummy though :)

How to cook : Cut Lebanese bread into quarters and butter them. Stuff cheese, tomatoes and pepper into bread and toast\bake(220c) for 2 minutes or until cheese melts.

Intro: Eat First Think Later

Hi all! And welcome to Eat First Think Later. This is my personal podcast dedicated to the one thing that we all depend on to survive, food.

Eat First Think Later is not new. This has been my trademark quote and I am famous for it among my friends and family, and maybe even strangers! I believe my enthusiasm towards this quote have influenced many people around me, changing their perspective about food. My goal for this podcast is the same, to 'awaken' taste buds and introduce new and delicious food to my listeners. Don't worry if my quote Eat First Think Later scares you. Other than sharing taste buds experience with you, I would also be addressing food topics such as healthy eating habit\food for those are trying to stay healthy.

I hope this podcast will share some useful and insightful tips and tricks about eating out, cooking, and also cleaning up!
