Eat First Think Later - Episode 012

Episode summary : The original recipe is actually from Blue Key Self rising flour's little recipe booklet that comes in every box of flour. As I did not have enough time to buy all the ingredients recommended in that recipe, I edited it to suit me. See below for my version of the recipe.

Use potato starch to replace the corn starch for a firmer topping. Cherries, peaches, grapes and nuts can also be used for the toppings and decoration. Listen to the podcat for more info.

I was in a hurry so all I could find was the cake tin. I should have used a nice transparent glass plate.

Tried decorating it but failed miserably. Looks like my cake is bleeding. The red stuff you see is actually strawberry extract.

Cake ingredients: for 6 x 9 inch baking tin
- 200g flour
- 4 large eggs
- 100g fine brown sugar
- 150g butter, room temperature
- 1/3 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 whole orange peel, chopped finely

1. Shift together flour, baking soda and baking powder. Put aside.
2. Cream butter with sugar.
3. Beat in eggs. Add vanilla essence. Mix well.
4. Mix in flour mixture gradually.
6. Pour mixture into the slightly greased baking tin.
5. Bake at 170c in a preheated oven for 30 minutes.
7. Let the cake to cool.

Frosting ingredients:
- 550ml water
- 140g castor sugar
- 75g milk powder
- 7 tbsp corn starch
- 1 tsp vanilla extract

1. Stir milk power into water.
2. Stir corn starch into 250ml of water
3. Boil the remaining milk with sugar in low fire.
4. Mix corn starch mixture into boiling milk and whisk until thicken.
5. Let mixture to boil for 1.5 minutes then remove from fire.
6. Use mixture while hot.

Put the cake together:
1. Cut the cake into half and place bottom layer on a serving plate.
2. Pour milk frosting mixture on the cake and spread.
3. Place the second layer of cake on top and pour remaining of the milk frosting mixture to cover and over flow the whole cake.
4. While mixture is still warm, decorate with fruits or nuts.
5. Let cool to room temperature before refrigerating.
